The New Territories is the rural chunk of land between Kowloon and the border to China. It is so named because this piece of land was ceded to the British nearly 50 years after Hong Kong Island and Kowloon. While this area is predominantly rural, called Hong Kong's garden, there is still a lot of development in this changing region. A multitude of bus routes and subway lines make getting around this vast area relatively easy, as it can take days to properly explore its many parks and temples. Kowloon and the New Territories are where the majority of local Chinese reside, while most foreigners live in Hong Kong proper. A train ride through the area will take you to Shenzhen, the booming industrial town and gateway to China and Guangzhou.
